A succulent twist on a Japanese favourite, from our friends at Cottage Delight. Big chunks of chicken are marinated in Cottage Delight Katsu Curry Sauce with turmeric and cumin, threaded onto skewers with capsicum and red onion, then barbecued and served with extra katsu sauce and sour cream for dipping. Allow at least 2 hours for the chicken to marinate.
Method
-
Cut the chicken into large chunks and place in a bowl. Season lightly with salt and pepper, then add 3 tablespoons of the Katsu Curry Sauce, the turmeric and the cumin. Mix well, cover and marinate in the fridge for at least 2 hours.
-
Thread the marinated chicken onto skewers, alternating with the capsicum and red onion. Each kebab should look full.
-
Cook on a barbecue or griddle pan over medium-high heat for 10 to 15 minutes, turning the skewers now and then, until the chicken is cooked through.
-
Scatter with chopped parsley and serve on a platter with a bowl of Katsu Curry Sauce and the sour cream for dipping.
